Sonoma County's Inman Family Wines, a boutique producer, has announced that it is using composted table scraps from top Bay Area restaurants (including Aqua, Oliveto, and Tadich Grill) in its sustainably farmed Russian River Valley vineyard.  Proprietor Kathleen Inman touts the "gourmet" waste materials, which typically consist of things like fish bones, oyster and crab shells, and vegetable peels, as "organic, nutrient-rich alternatives to synthetic fertilizers".
